Spruce tips have a distinct taste, citrus with a hint of resin. Spruce tips can make all kinds of extraordinary things including: Spruce Tip Vinegar, Spruce Tip Salt, Spruce Tip Sugar, Spruce Tip Syrup, and Candied Spruce Tips, the list goes on. We have frozen them to be available year round. Take what you need and reseal remaining tips for storage, think of them like you would spinach once they are thawed out they will only last a few days along with the flavour and aroma profile decreasing.
Spruce needles are exceptionally high in Vitamin C – frozen or dried spruce tips are good source of vitamin C.

Perishable items: Keep Refrigerated upon arrival. Best consumed within 1-4 days.
Shelf Stable items: Refrigerate after opening, view best before date. Please follow instructions on packaging.

Orders are generally processed within 1–3 business days after the order is placed. We do not ship perishable items on Friday, they are shipped the following Monday.

Spruce Tip Vinaigrette
Ingredients:
2 tbsp frozen spruce tips (chopped while still frozen)
2 tbsp apple cider vinegar or white wine vinegar
1 tsp honey or maple syrup
1/2 tsp Dijon mustard
1 small garlic clove, grated (optional)
1/3 cup olive oil
Salt and pepper to taste
How to:
In a bowl or jar, whisk together vinegar, mustard, honey, and garlic.
Slowly whisk in olive oil until emulsified.
Stir in chopped frozen spruce tips (they’ll thaw quickly).
Season to taste.
Chef Tips: Great on Bitter greens, roasted root veggies, grilled salmon, or wild rice salads.
Spruce Tip Syrup
Ingredients:
1 cup water
1 cup sugar
1/2 cup frozen spruce tips
How to:
Simmer all ingredients until sugar dissolves.
Let steep 15–30 mins off heat.
Strain and refrigerate.
Suggested Use: in cocktails, mocktails, or over pancakes/yogurt.
