Our Sea Buckthorn berries are organic! They are plump, juicy bright orange berries. They require no peeling or de-seeding; like blueberries, they may be eaten out of hand as-is, juiced, or blended. The berry itself has a thin skin and is very fragile. They are edible when fresh but have an acidic flavour. Use sea buckthorn juice as a lemon juice substitute. Sea Buckthorn berries contain malic acid, the same type of acid that gives an apple its tart flavor. They are great for chutneys, sauces, syrup, compote, vinegar, mousse, tea, tarts, smoothies, sorbet, tarts, curd, cakes, parfait, panna cotta, jelly, jams, rugelach & soups! Not to mention, they are an omega powerhouse. Try your hand at spirits and make Sea buckthorn Gin, infuse the fruit in Vodka or drizzle in a Champagne fizz!

Upon receiving the berries, they should be remain in the plastic bag they arrived in and be placed in the freezer until they are ready to be used.

Ingredients
Roasted Carrots
1 ½ lbs carrots (whole if small, halved if large)
1 Tbsp olive oil
Salt & pepper
Sea Buckthorn Glaze
ž cup frozen sea buckthorn berries
2 Tbsp honey
1 Tbsp apple cider vinegar
1 small shallot, finely minced
1 tsp fresh thyme (or rosemary)
2 Tbsp butter
To Finish
1 cup cooked farro (or barley)
2 Tbsp chopped parsley
Âź cup toasted hazelnuts (optional)
Soft goat cheese or feta (optional)
Instructions
Roast carrots:
Toss carrots with olive oil, salt, and pepper. Roast at 400°F (200°C) for 20–30 minutes until caramelized and tender.
Make glaze:
In a small saucepan, combine frozen berries, honey, vinegar, and shallot.
Simmer 6–8 minutes until berries burst and mixture thickens slightly.
Strain for a smooth glaze (press firmly), then whisk in thyme and butter off heat.
Assemble:
Toss warm carrots with some of the glaze.
Spread farro on a platter, top with glazed carrots.
Spoon extra glaze over.
Finish with parsley, hazelnuts, and cheese if using.
Why this works - Sea buckthorn’s acidity cuts through roasted sweetness and grains beautifully. The butter rounds it out so it doesn’t taste harsh.
