Dried Wild Porcini Mushroom Powder has a powerfully earthy aroma matched by their full-bodied, umami-rich flavour. The Powder is Made from 100% porcini mushrooms, this dried mushroom powder has a floury texture and a rich flavour. It can be stirred into liquids for added flavour in mushroom cream sauces and broths, or added to flour when making bread or pasta dough. Porcinis are a classic addition to risotto, pasta dishes, soups and stews. Porcini are picked fresh then air dried and ground into powder. Storage Tips: Store in air tight packaging once opened in order to reduce the exposure to unwanted moisture.

Porcini-Rubbed Cream Sauce (Pasta, Chicken, or Steak)
Ingredients:
2 tsp porcini powder
2 tbsp butter
1 small shallot, minced
1 clove garlic, minced
½ tsp fresh thyme or sage
100ml dry white wine or dry sherry
200ml thickened cream (or crème fraîche)
Salt + black pepper, to taste
Optional: 1 tsp Dijon mustard or grated parmesan
Squeeze of lemon juice, to finish
How to:
Sauté aromatics
In a pan over medium heat, melt butter. Add shallot and garlic, cook until soft (2–3 minutes).
Add porcini + wine
Stir in porcini powder and herbs. Cook 30 seconds.
Deglaze with wine; simmer until reduced by half.
Finish the sauce
Add cream, stir gently. Simmer 3–5 minutes until slightly thickened.
Season with salt, pepper, and lemon juice to taste. Add mustard or parmesan if using.
Serve with:
Fresh pappardelle, gnocchi, or polenta
Spoon over pan-seared steak or roast chicken
Use as a base for wild mushroom ragù
