Also known as “verjuice”, Verjus is the pressed juice of unripened grapes. While acidic, Verjus has a gentler flavor than vinegar, with a sweet-tart taste that is often used to heighten the flavour of many sauces or mustards. The word Verjus derives from the French term vert jus, literally “green juice”, which refers to its source—the high-acid, low-sugar grapes that winemakers thin from the vines just when the crop is beginning to ripen. This early crop of unripe grapes is pressed, resulting in Verjus. Unlike wine, however, Verjus is not fermented, and is not alcoholic, meaning that it will not interfere with the flavour of the accompanying drinking wine.
Not as sharp as vinegar but more tart than white wine. You'll find it interesting and versatile for both Savory and Sweet Applications. Splash to deglaze a pan, or add a little zing to risotto. Use instead of lemon juice or wine. Perfect for sauces for meat or spicy foods, as well as marinating and salad dressings.
Aside from cooking, Our Verjus has been commonly made into mock-tails! Keep it simple with the 3 ingredients or spruce it up as you please. Equal parts, Verjus, tonic water, soda water, and boom.. A Verjus Spritz.

Orders are generally processed within 1–3 business days after the order is placed. We do not ship perishable items on Friday, they are shipped the following Monday.

WHAT TO DO WITH VERJUS
In Salad Dressings (Vinegar Alternative):
Use verjus in place of vinegar or lemon juice in vinaigrettes. It’s especially nice with delicate greens, fruit, or nuts.
Quick Verjus Dressing:
Whisk 2 parts olive oil + 1 part verjus + Dijon mustard + salt & pepper. Add shallots or herbs as desired.
Pan Sauces for Meat or Fish:
Deglaze a hot pan with verjus instead of wine or vinegar. Add a bit of butter and fresh herbs for a bright finishing sauce. Best pairings are Roast chicken, Duck breast, Seared fish, Scallops.
Pickling or Quick Pickles:
Use verjus as the acid base in refrigerator pickles for a softer tang.
Cheese & Charcuterie Boards:
Drizzle verjus over soft cheese like chèvre or blue cheese. Use it to macerate fruit (grapes, berries, figs) served with cured meats.
In Beverages:
Add to sparkling water, cocktails, or shrubs.
Mix with tonic and herbs for a sophisticated non-alcoholic aperitif.
In Cooking Grains or Legumes:
Add a splash while cooking rice, farro, lentils, or quinoa to subtly brighten the flavor.
Poaching Fruit or Vegetables:
Simmer apples, pears, or even fennel in verjus with a touch of honey and herbs for a savory-sweet side or dessert.
