Aged to perfection, this small batch artisan vinegar brings together the deep, mellow sweetness of maple syrup, the nutty complexity of sherry, and the warm, smoky depth of bourbon. The result is a rich, velvety vinegar with layers of toasted oak, dried fruit, vanilla, and subtle caramel.

Balanced and bold, it’s a finishing vinegar worthy of your best dishes. Use it to elevate roasted vegetables, enrich pan sauces, glaze grilled meats, or stir into dressings and marinades for a luxurious depth. Just a drizzle transforms cheese plates, mushrooms, or even cocktails. This vinegar has a 6% acidity and is best utilized in a cooking capacity, such as to brighten up a marinara sauce or to add acidity and a depth of flavor. WHAT TO DO WITH NOBLE 03:

Dressings & Vinaigrettes
Use it in place of balsamic or sherry vinegar in a vinaigrette:
3 parts olive oil
1 part vinegar
1 tsp Dijon
Optional: a touch of maple or honey to round it
Pairs especially well with:
Arugula, blue cheese, walnuts, pears
Roasted beet salad
Grilled peaches and burrata

Glaze or Reduction

Simmer gently to reduce into a drizzling glaze for:
Grilled meats (especially pork or duck)
Roasted veggies (carrots, squash, Brussels sprouts)
Hard cheeses or charcuterie

Deglazing Sauce
After searing steak, pork chops, or mushrooms, deglaze the pan with a splash of this vinegar.
Add butter and a touch of maple syrup to finish a pan sauce.

Sautéed Mushrooms with Maple Sherry Bourbon Glaze
Ingredients (Serves 2–4):

1 lb mushrooms, sliced (your choice, chefs blend, shiitake, oyster, or a wild mushroom)
1–2 tablespoons olive oil or butter
2 cloves garlic, minced
1 teaspoon fresh thyme (or ½ tsp dried)
2 tablespoons Maple Sherry Bourbon Oak Vinegar
1 teaspoon maple syrup (optional, for balance)
Salt & pepper, to taste
Optional: fresh parsley, chopped, for garnish

Instructions
Clean and slice mushrooms (not too thin — you want texture).
Heat oil or butter in a large skillet over medium-high heat.
Add mushrooms and sauté undisturbed for 2–3 minutes to get some browning.
Add garlic and thyme; continue cooking until mushrooms are golden and tender — about 6–8 minutes total.
Lower heat slightly and deglaze the pan with the vinegar. Stir to coat.
Add a touch of maple syrup if you'd like a sweeter finish. Let it bubble and reduce slightly to form a light glaze.
Season with salt and cracked black pepper to taste.
Finish with fresh parsley if desired.
