Shiitake mushrooms are often described as having an earthy, smoky flavor and a rich meaty-yet-buttery texture when cooked. It's no surprise that they are commonly found in an array of dishes. Shiitake stems are technically edible. However, they have a fibrous and woody texture, making them less than ideal for recipes. Instead, its recommended to use them while making meat-based or vegetable stock and removing once simmered. These mushroom are certified Organic and grown in the United States.
Storage Tips: Mushrooms should be kept in the refrigerator in a paper bag. Best consumed within the first three days of arrival. If the mushrooms you receive are a little damp, allow them to air dry in the refrigerator. Store in a paper bag or a bowl lined and covered with a hand towel/paper towel. Mushrooms should be fully cooked prior to eating. As a rule, clean the mushrooms as you need them, ideally without water. Paring knives, mushroom brushes, and tea towels can all be used to remove debris.

Sautéed Shiitake Mushrooms with Soy-Garlic Glaze
Ingredients:
200g fresh shiitake mushrooms, stems removed, caps sliced
2 tbsp neutral oil (like grapeseed or vegetable oil)
2 garlic cloves, minced
1 tbsp soy sauce or tamari
1 tsp rice vinegar or mirin (optional, for balance)
1 tsp sesame oil (optional, for finish)
Salt and pepper, to taste
Sliced scallions or toasted sesame seeds, for garnish
To do:
Prepare mushrooms
Wipe mushrooms clean. Trim stems (save for stock!) and slice caps.
Cook mushrooms
Heat oil in a skillet or wok over medium-high heat.
Add sliced shiitake mushrooms and cook undisturbed for 2–3 minutes to sear.
Stir and continue to cook another 3–4 minutes until golden and tender.
Add aromatics and glaze
Add minced garlic and sauté briefly (30 seconds).
Add soy sauce and rice vinegar or mirin. Stir to coat.
Cook 1–2 minutes more until slightly glazed.
Finish
Turn off heat. Drizzle with sesame oil if using.
Season to taste with pepper and a pinch of salt (if needed).
Garnish with scallions or sesame seeds.
Serving Ideas:
Serve over steamed rice or noodles
Add to miso soup or ramen
Use in veggie wraps, dumplings, or sushi bowls
Toss with roasted greens or tofu for a vegan main
