The Maitake mushroom with it's distinct citrus edge, is regarded as possessing a long mid palate citronella finish. When cooked, Maitake mushrooms are succulent, semi-firm, and chewy with a woodsy, earthy, and spicy flavour. This mushroom is meaty and has a soft floral nose. It is also widely regarded as having medicinal benefits. The surface of the tiny pores under the caps is whitish. The spores are also white. Cultivated Organic Product of USA.
Storage Tips: Mushrooms should be kept in the refrigerator in a paper bag. Best consumed within the first three days of arrival. If the mushrooms you receive are a little damp, allow them to air dry in the refrigerator. Store in a paper bag or a bowl lined and covered with a hand towel/paper towel. Mushrooms should be fully cooked prior to eating. As a rule, clean the mushrooms as you need them, ideally without water. Paring knives, mushroom brushes, and tea towels can all be used to remove debris.

Maitake Mushroom "Steak" with Garlic Herb Butter
Ingredients:
2 large maitake clusters (~150–200g each), cleaned and trimmed
2–3 tbsp olive oil or ghee
Salt & cracked black pepper
Optional: dash of soy sauce or balsamic vinegar for extra umami
For Garlic Herb Butter (optional, but excellent)
2 tbsp butter (or vegan butter)
1 garlic clove, minced
1 tsp chopped parsley, thyme, or rosemary
Squeeze of lemon juice
How to:
Pan-Seared Version (Quick & Crispy)
Heat a cast iron pan over medium-high heat. Add oil.
Sear maitake: Press mushroom clusters flat (or slice thickly if very large). Sear undisturbed for 4–5 min until deep golden. Flip and sear other side.
Season with salt, pepper, and a splash of soy sauce or balsamic, if desired.
Add garlic herb butter in the last minute of cooking. Baste the mushrooms with the melting butter until fragrant.
Serve with more herbs, lemon, or over mashed potatoes, polenta, or greens.
Oven-Roasted Version (More Hands-Off)
Preheat oven to 220°C / 425°F.
Brush mushrooms with oil, season generously with salt and pepper.
Place on a lined tray and roast for 20–25 minutes, flipping halfway, until crispy-edged and tender.
Optional: Add herb butter or drizzle of soy-balsamic glaze before serving.
