Storage Tips: Mushrooms should be kept in the refrigerator in a paper bag. Best consumed within the first three days of arrival. If the mushrooms you receive are a little damp, allow them to air dry in the refrigerator. Store in a paper bag or a bowl lined and covered with a hand towel/paper towel. Mushrooms should be fully cooked prior to eating. As a rule, clean the mushrooms as you need them, ideally without water. Paring knives, mushroom brushes, and tea towels can all be used to remove debris.

Orders are generally processed within 1–3 business days after the order is placed. We do not ship perishable items on Friday, they are shipped the following Monday.

Pick Up Orders: Generally ready for pick up within 24 hours, you will receive a confirmation email once your order is ready for pick up. We are open Monday to Friday, 8am-330 pm for pick up.

Crispy Oyster Mushroom Tacos (Tinga-Style or Street-Style)
Ingredients:
300–400g large fresh oyster mushrooms, torn into strips
2 tbsp oil (avocado, canola, or olive)
1 tsp smoked paprika
½ tsp ground cumin
½ tsp chili powder or chipotle powder
Salt & pepper, to taste
1 tbsp lime juice or apple cider vinegar (to finish)
For Serving:
Corn or flour tortillas
Pickled red onions
Shredded cabbage or slaw
Avocado or guacamole
Salsa or chipotle crema
Fresh cilantro, lime wedges
How to:
Prep mushrooms
Wipe mushrooms clean. Tear into rough strips for a shredded texture (like pulled meat).
Sear & season
Heat oil in a large skillet over medium-high.
Add mushrooms in a single layer. Let them cook undisturbed for 4–5 minutes until golden.
Flip and cook another 3–4 minutes until crispy on edges.
Spice them up
Add paprika, cumin, chili powder, salt, and pepper. Stir to coat and toast spices for 1–2 minutes.
Splash with lime juice or vinegar to brighten.
Assemble tacos
Warm tortillas and fill with crispy mushrooms
Top with slaw, avocado, pickled onions, salsa, and herbs.
Chef Tips:
For even crispier mushrooms, roast at 200°C (400°F) with oil and spices for 25–30 mins.
