These are the same as our regular King Oyster, just miniature in size! King oysters are cultivated on the sawdust of broad-leaved trees. These mushrooms have a stronger flavour than their relative, the oyster mushroom. There are approximately 20 mushroom per pound. It has hints of shellfish, a creamy finish and a silky soft texture with a multifloral nose. It holds up extremely well under heat, making it well suited for stews and soup. It's the perfect mushroom to lightly score and sear, or to make tiny vegan scallops! Its pulp is fleshy and flavour is incredible.

Storage Tips: Mushrooms should be kept in the refrigerator in a paper bag. Best consumed within the first three days of arrival. If the mushrooms you receive are a little damp, allow them to air dry in the refrigerator. Store in a paper bag or a bowl lined and covered with a hand towel/paper towel. Mushrooms should be fully cooked prior to eating. As a rule, clean the mushrooms as you need them, ideally without water. Paring knives, mushroom brushes, and tea towels can all be used to remove debris. 

Storage Tips

Perishable items: Keep Refrigerated upon arrival. Best consumed within 1-4 days.

Shelf Stable items: Refrigerate after opening, view best before date. Please follow instructions on packaging.

Orders are generally processed within 1–3 business days after the order is placed. We do not ship perishable items on Friday, they are shipped the following Monday.

Pan-Seared Fresh King Oyster Mushrooms with Garlic and Herbs
Ingredients:

200g fresh king oyster mushrooms, sliced into ½ inch thick rounds or lengthwise strips
2 tbsp olive oil or unsalted butter
2 garlic cloves, minced
Salt and freshly ground black pepper
Fresh thyme or rosemary, chopped (optional)
Lemon wedge (optional)

How to
:
Prepare mushrooms
Wipe mushrooms clean with a damp cloth or paper towel. Slice as desired (rounds or lengthwise).
Heat pan
Heat olive oil or butter in a large skillet over medium-high heat.
Cook mushrooms
Add mushrooms in a single layer. Let them sear without moving for 3-4 minutes until golden brown on one side.
Flip and cook the other side for another 3-4 minutes until browned and tender.
Add garlic and herbs
Add minced garlic and herbs to the pan. Sauté for 1-2 minutes until fragrant, stirring frequently to avoid burning garlic.
Season and finish
Season with salt and pepper to taste.
Optional: finish with a squeeze of lemon juice for brightness.
