Haskap Berries, also known as Edible Blue Honeysuckle or Honeyberry. Haskap is an ancient Japanese name of the Ainu people of Northern Japan for the fruit meaning “berry of long life and good vision”. Haskap Berries have their own unique taste, colour and texture. The taste has been described as tart/sweet and juicy, like a raspberry. They have a powdery blue skin, like a blueberry but the skin is quite thin and melts in your mouth. They contain very tiny edible seeds.

Upon receiving the berries, please note they will be slightly melted from the travel. They should be remain in the plastic bag they arrived in and be placed in the freezer until they are ready to be used. 

Storage Tips

Perishable items: Keep Refrigerated upon arrival. Best consumed within 1-4 days.

Shelf Stable items: Refrigerate after opening, view best before date. Please follow instructions on packaging.

Shipping

Orders are generally processed within 1–3 business days after the order is placed. We do not ship perishable items on Friday, they are shipped the following Monday.

WHAT TO DO WITH HASKAP BERRIES

Haskap Berry Crumble Bars
Bright, jammy filling with a buttery oat crust — excellent with frozen berries.
Ingredients
Crust & Topping
1 cup flour
1 cup rolled oats

½ cup brown sugar
½ tsp salt
½ tsp cinnamon
½ cup melted butter
Filling
2 cups frozen haskap berries (do not thaw)
⅓ cup sugar (adjust — they’re tart)
1 tbsp cornstarch
1 tsp lemon juice
½ tsp vanilla
Instructions
Preheat oven to 350°F (175°C). Line an 8x8 pan with parchment.
Mix crust ingredients until crumbly.
Press ⅔ of mixture into the bottom.
Toss frozen berries with sugar, cornstarch, lemon, and vanilla.
Spread over crust.
Sprinkle remaining crumble on top.
Bake 35–40 minutes until bubbly and golden.
Cool completely before slicing (filling sets as it cools).

Savory Haskap Pan Sauce (for Duck or Pork)
Haskaps shine with rich meats.
Ingredients
1 cup frozen haskaps
1 small shallot, minced
¼ cup red wine
1 tsp honey
1 tsp balsamic vinegar
½ cup chicken or duck stock
1 tbsp butter
Instructions
After searing duck breast or pork, remove meat and keep warm.
In same pan, sauté shallot 1 minute.
Add red wine; reduce by half.
Add haskaps, honey, balsamic, and stock.
Simmer 6–8 minutes until thickened.
Whisk in butter to finish.
The flavor is deep, slightly tart, and beautifully glossy.
