Dill pollen is the concentrated essence of dill — more floral, citrusy, and complex than fresh dill alone. It adds a bright, aromatic punch to dishes, especially when used as a finishing touch. Dill Pollen is a potent alternative to the seeds or leaves of the dill flower, providing a longer lasting flavour, bright colour and unique texture. Hand-harvested for bold, crisp dill flavour. Add to seafood, meat and vegetables while cooking for fresh dill flavour and aroma. Add to sauces to brighten rich flavour. Use at end of cooking process to preserve flavour and aroma.

Storage Tips

Perishable items: Keep Refrigerated upon arrival. Best consumed within 1-4 days.

Shelf Stable items: Refrigerate after opening, view best before date. Please follow instructions on packaging.

Shipping

Orders are generally processed within 1–3 business days after the order is placed. We do not ship perishable items on Friday, they are shipped the following Monday.

HOW TO USE DILL POLLEN

With Fish & Seafood (Classic Pairing)
Sprinkle over grilled salmon, poached cod, or seared scallops just before serving.
Add to a butter or cream sauce for fish dishes.
Use in a rub for gravlax or smoked fish toast.

On Chicken or Pork
Mix with salt, pepper, and garlic for a dry rub or finishing sprinkle.
Excellent on roast chicken, schnitzel, or grilled pork chops.

On Potatoes & Vegetables
Toss over roasted potatoes, carrots, or beets after cooking.
Blend into butter or sour cream for baked potatoes.
Sprinkle on grilled corn, sautéed zucchini, or roasted fennel.

In Salad Dressings & Yogurt Sauces
Whisk into vinaigrettes (great with lemon juice or white wine vinegar).
Stir into tzatziki, ranch, or yogurt dips for extra aroma.
Use on cucumber salad, slaws, or grain salads.

With Cheese & Breads
Add to a goat cheese log or ricotta with lemon and olive oil.

Mix yolks with mayo, Dijon, lemon juice, and a pinch of dill pollen. Pipe into whites and finish with more dill pollen and flaky salt.
