The Lion's Mane we offer are grown in Canada. Lion’s mane is primarily known for its brain-boosting and brain-protective properties but its also a delicious mushroom to eat! Lion’s Mane mushrooms are tender and chewy with a mild, sweet, seafood flavour. In addition, they have a texture reminiscent of crab or lobster meat when cooked. Rip apart and cook in sauce to mimic a pulled chicken or pork.
Storage Tips: Mushrooms should be kept in the refrigerator in a paper bag. Best consumed within the first three days of arrival. If the mushrooms you receive are a little damp, allow them to air dry in the refrigerator. Store in a paper bag or a bowl lined and covered with a hand towel/paper towel. Mushrooms should be fully cooked prior to eating. As a rule, clean the mushrooms as you need them, ideally without water. Paring knives, mushroom brushes, and tea towels can all be used to remove debris.

Ingredients:
200g fresh lion’s mane mushrooms, torn or sliced into bite-sized pieces
2 tbsp butter or olive oil
2 garlic cloves, minced
1 small shallot, finely chopped
Salt and freshly ground black pepper, to taste
Fresh thyme or parsley, chopped (for garnish)
Lemon wedge (optional)
To do:
Prepare mushrooms
Gently clean the lion’s mane mushrooms with a damp cloth or soft brush to remove any dirt. Avoid washing directly under water to keep texture intact.
Tear or slice into bite-sized pieces.
Sauté aromatics
Heat butter or olive oil in a large pan over medium heat.
Add shallot and garlic, sauté until fragrant and softened, about 2-3 minutes.
Cook mushrooms
Add lion’s mane mushrooms to the pan.
Cook for 6-8 minutes, stirring occasionally, until golden and tender. The mushrooms will release moisture, then reabsorb it.
