Truffles are a true natural luxury. Rare and indulgent, they are sought after by epicureans around the globe who see them as black gold. This deliciously decadent ingredient stimulates the senses and indulges the pallet. Many have tried to farm them and many have failed, until now that is.
These Australian grown truffles are the same variety as the highly sought after Winter Périgord Truffles harvested in France. With a black outer & insides that are predominantly black with white spidery veins throughout, these beautiful ingredients are sure to add elegance to any dish. The flavour and aroma on these is much deeper and intense than the Summer truffles coming out of Italy during these Summer months.
Capitalize on the beauty of the veins by shaving them thinly with a truffle slicer. Best used in simple dishes to let the Fresh Truffle flavor be the star without being overpowered. Truffles are often used sparingly shaved over fresh pastas or risottos!

Orders are generally processed within 1–3 business days after the order is placed. We do not ship perishable items on Friday, they are shipped the following Monday.

WHAT TO DO WITH FRESH TRUFFLES
Shave Them Over Simple Dishes
Use a truffle shaver or mandoline to slice paper-thin pieces just before serving. Great over:
Soft scrambled eggs or omelets
Buttered pasta (e.g., tagliatelle, risotto, or gnocchi)
Risotto (parmesan, mushroom, or truffle risotto)
Potato purée or creamy polenta
Steak, veal, or roasted chicken
Infuse Cheese
Gently layer truffle slices between soft cheeses (like Brie) to make a truffle cheese.
Add to Sauces (Gently)
Fold into warm (not boiling) cream or beurre blanc sauces. Heat kills aroma, so add truffle at the end:
Truffle cream sauce for pasta, poultry, or fish
Add to béchamel for truffled mac & cheese
Shave Over Pizza or Flatbread
Add to white pizza (no red sauce) with mushrooms, cheeses, and herbs.
Finish post-bake with shaved truffle and a drizzle of truffle oil.
Truffle Eggs or Omelet
Store eggs in a sealed container with fresh truffle for 2–3 days. The truffle aroma infuses the eggshells, making truffled eggs before you even cook.
Truffle Toast
Toast crusty bread, spread with good quality butter or a soft cheese (like ricotta or brie).
Top with thin truffle slices.
Finish with sea salt and cracked black pepper.
Truffle Butter
Grate or finely mince truffle into softened butter.
Roll into a log, chill, and slice as needed.
Use on steaks, pasta, warm bread, or veggies.
Keeps for a few days in the fridge, or freeze for longer storage.
Fresh Truffle Tagliatelle
Ingredients (serves 2):
6 oz (170g) tagliatelle or fettuccine (fresh pasta preferred)
2 tbsp unsalted butter
¼ cup grated Parmigiano-Reggiano
1–2 tbsp pasta cooking water (as needed)
Salt, to taste
Fresh black truffle (about 10g or as much as you desire), thinly shaved
Instructions:
Cook the Pasta
Boil the tagliatelle in salted water until al dente. Reserve some of the cooking water before draining.
Make the Butter Sauce
In a pan over low heat, melt the butter.
Add the hot, drained pasta and toss gently to coat.
Stir in the cheese and a splash of cooking water to create a silky sauce.
Season
Add a pinch of salt if needed. Mix gently so the sauce clings to the noodles.
Plate and Shave
Divide the pasta into warm plates or bowls.
Shave the fresh truffle over the top using a truffle shaver or mandolin.
Serve Immediately
Eat while warm — no extra garnishes needed.
