Fava Beans / lb
Though they look like lima beans, fava beans are less starchy and have a milder taste.
Fava beans are creamy, earthy, nutty, slightly sweet, and slightly bitter. Remove the beans from the pod and cook the peeled fava beans until tender. This can take anywhere from 10-45 minutes depending on the size of your beans. The beans have a waxy outer coating, which you'll need to remove. Blanch them in boiling water for 30 seconds, and then transfer to an ice bath to stop the cooking process. The waxy coating will slip right off. Fava beans can be eaten raw, boiled, steamed, stewed, mashed, sautéed, fried, or roasted.
